Ingredients:
1 tbsp. Curry Powder
½ tbsp. Coconut Oil
1 Carrot, diced
1 Onion, diced
1 Sweet Potato, diced
1 small Cauliflower head, chopped
½ tsp. Turmeric
2 cups Vegetable Broth
1 cup Coconut Milk

Preparation:
– Melt the coconut oil in the Instant Pot on sauté.
– Sauté the onions and carrots for 3 minutes.
– Stir in the remaining ingredients.
– Close the lid and set the Instant Pot to soup mode.
– Cook for 20 minutes.
– Uncover the pot and blend the soup with a hand blender.
– Serve and enjoy.
